actually only 9 hours (give or take a few minutes) til I have my ultrasound. Sooooo excited and I'm trying to not think about it too much or make too big of a deal about it, because I know I won't be able to sleep. Jon and Mom are coming with me and I've been told to drink a Big Mountain Dew before I go so the baby will be moving and we'll have more of a chance to tell what it is. I"ll be so happy to not call him/her it anymore! So please pray that the little crabby-patty is healthy and slightly immodest :) I'll let you know when I know!

One month from today and I will be finding out if we'll be raising a little hair stylist or little video gamer. I can't wait!

Got to hear my little heartbeat again today :) It's so cool and reassuring because I haven't really felt pregnant. My pants are fitting a little tighter and I'm hungry all the time, but nothing that just screams to me "Hey you have a baby inside of you!" LOL. Anywho, baby sounded good, Dr said I was looking good. I'll see him again next month and then we'll get to find out what we're having April 19th! That seems so far away, especially when I see good deals on cute outfits. A client of mine dropped off a glider for us today, so I guess the nursery is officially started. Some friends of ours from church are giving us a crib, mattress and changing table and my aunt called and said she has a swing and a few other things for us from my lil cousin. We're taking anything free we can get! Hope you all are doing well.

I tried out a new recipe tonight and it was just so easy and delicious that I had to share it.
1 1/2 cups uncooked white rice [you can use brown rice but you will want to cook it first]
1 16oz can black beans, drained and rinsed
1 yellow pepper, chopped [I didn't have a yellow pepper so I used half a green]
1 can condensed cream of chicken soup + can of water
1/4 cup chopped fresh cilantro [if you don't have cilantro you can use 1 tsp ground coriander instead]
4 medium bonelss skinless chicken breasts
1/2-1 cup salsa
1 cup Fiesta Blend shredded cheese
1. Preheat over to 400.
2. In the bottom of a 9x13 pan, mix the rice, black beans and peppers. Mix together the soup, water and cilantro. Pour over rice mixture.
3. Place the chicken breasts on top of the mixture and cover with salsa.
4. Bake for 35 minutes or until chicken is done. Remove from oven and sprinkle with cheese. Return to oven for 10 minutes or until cheese is melted.
I had pretty large chicken breasts, so i cut them in half and ended up having 8 small breasts which worked fine. I think I would spray my pan with a little nonstick spray next time just to keep the rice from sticking to the edges as much. I served it with chips and more salsa, but we ended up kinda scooping the rice and beans up with the chips. So good and healthy. Hope you enjoy.
