Kim inspired me to post one of my favorite recipes that is actually very nutritious.
Breakfast Cake (really it is good for you)
1 cup butter, melted and cooled
3/4 cup buttermilk
2 cups whole wheat flour
2 cups whole rolled oats
3/4 cup honey
2 eggs
1 t. sea salt
1 t. baking soda
1 t. vanilla
1 cup dried fruit
Stir together butter, buttermilk, flour and oats in a glass bowl. Cover with cloth and allow grains to soak on counter overnight or for at least 8 hours.
Stir in honey, eggs, salt, baking soda, and vanilla. Fold in dried fruit. Pour into a buttered 9x9 inch baking pan. Bake at 350 30 - 40 min.

Working like crazy to get stuff done for VBS - July 6-10. Wish everyone could come! Our topic this year is Acts. My lessons are the coming of the Holy Spirit and the Philippian Jailer. Looking forward to teaching a great group of kids, but I know I'll be ready for a break when we are done! My mother-in-law and I are wanting plan a get away for the last part of July or August. Anybody have any suggestions for a cool place to stay in Texas, Oklahoma or ARkansas?
We are going to Dallas to visit friends this weekend. (OK, not exactly Dallas, but when you are country like me once you get to Terrell you're in Dallas. Once I was meeting my dad at Love Field. I called him to see where he was. The following conversation ensued:
Dad: I am almost there.
Me: But where are you?
Dad: I am in Dallas.
Me: Where?
Dad: I just passed through Ennis.)
Anyway, looking forward to good times and I bet I have lots of cute pics to post when we get home.
