I have a question...

Am I the only one on this group who is the only member of the household that is a vegetarian?

It's making it pretty hard on our budget... but thankfully someone gave me a huge bag of pinto beans last night... which are cheap... but still.

Any tips?

Dennis isn't doing the veggie thing either. (He committed to it for a short time!)
I just make my food and he either makes himself something different, or something to go along with what I'm eating! We had some pre-formed hamburger patties in the freezer and I cooked him one so he could eat it along with my stir fry.
But, last night, I made pinto bean tacos with a mango salsa and he ate that.
Just think, you only have to buy 1/2 the amount of meat! But, aren't you eating dairy?

I am not vegetarian...yet. I wanted in here to get info. However, I am the only one in my household who would even ever consider it. My husband is very much a meat and starch kind of guy.

I am wanting to incorporate more vegetarian/raw ways of eating and cooking into our diet, but it will have to go gradually. I am especially interested in this because my father was just diagnosed with a type of terminal lung cancer (mesothelioma, due to asbestos exposure while in high school) and while visiting him last week was reading through several books on juicing and eating raw foods and the healing and preventive power of this kind of food on our bodies from all diseases.

There was a story of one lady who had major deterioration of her spine, her car was then hit by a train and she was eventually put in a wheelchair due to severe arthritic pain. She started the juicing and raw dieting, and two years later there was no deterioration of her spine! Her spine had regenerated itself! Further, she was walking four miles a day...no longer in a wheelchair AND her doctor had to prescribe her weaker glasses because her eyesight had started to improve. There were tons of testimonies such as this one.

That story is just incredible to me. It is thrilling and exciting to think what your body is capable of doing when given proper nourishment.

I go to worship services with a lady who used to juice. She loved it and said it was the best health she had ever been in. She stopped and I don't know why. But, she brags about how great she felt when she did it.
I am interested in juicing too. Right now, I'm just starting with the McDougal Program and will try to incorporate some juicing along the way.
That is an inspirational story. Keep us posted on your dad.

Over time my hubby has slowly gone toward being more of a vegetarian. Primarily because he feels better when he eats better. We really can adjust most meals so we aren't making alot of different food to satisfy both of us. But, we both eat salad and vegetables, beans, rice so that makes it easier.

Yes, but its just me and hubby :) So It isn't too hard.
He's great about it..he doesn't need meat at every meal.
He loves fish, which I eat, so I do that a lot when I do cook meat.
