Sarah's Special Thanksgiving Dressing
(Serves 2-4)

Ingredients:
2 large boneless, skinless chicken breasts (frozen)
1/2 cup water
3 stalks of celery, chopped
1/2 large onion, chopped
1 can chicken broth
3 medium eggs
8-10 pieces of bread
Black pepper
Garlic powder
Sage (optional)
Italian seasoning or oregano (optional)
Poultry seasoning (optional)

Preparation:
1) Put chicken breasts and about 1/2 cup water in large saucepan; water should not cover chicken. Sprinkle pepper, garlic powder and optional seasonings over chicken breasts. Cover and cook for 20-30 minutes over medium heat. Chicken may need to be turned or separated during cooking.

2) Toast bread thoroughly. Tear toasted bread into thumbnail-sized pieces. Bread should fill loaf pan. Beat eggs thoroughly. Pour beaten eggs over toast and mix until all pieces are thoroughly coated. Set aside.

3) Chop celery and onions, fine to medium.

4) Remove chicken breasts from saucepan. Add celery and onions to saucepan; stir. Cube or chop chicken breasts; chicken should be substantially cooked at this point. Add chicken to saucepan; stir. Add chicken broth to saucepan; stir. Cover and cook for 10-15 minutes over medium heat.

5) Preheat over to 350F. Stir toast-and-egg mixture into saucepan; most of the liquid should be absorbed by the bread. Remove from heat; watch for burning or sticking in saucepan at this point due to the reduction of liquid.

6) Pour dressing from saucepan into loaf pan; pan may be greased lightly. Cover with foil. Bake in oven for 30 minutes or until dressing bubbles and/or browns.

7) VARIATIONS, SUBSTITUTIONS, OPTIONS.
For a richer taste,
--add a generous amount of butter to saucepan with chicken broth
--use turkey broth instead of chicken broth
--use a specialty bread (rye, pumpernickel, seasoned) instead of ordinary wheat or white bread

If you do not have chicken broth, use chicken bullion; add butter and extra poultry seasoning to enhance the bullion.

Any size or shape pan can be used. Adjust baking time if a shallow dish is used.

This recipe is only roughly scalable as it depends on taste and texture.
